Delicious — Eggplant Napoleon
We just finished dinner, and it was delicious. Ma selected a recipe that sounded close to a dish I’d tried at Mustard Seed Market . Stacks of breaded eggplant (pre-fried and baked), tomato slices, fresh basil, fresh mozzarella, sauted mushrooms, and roasted red pepper are baked to warm and melt the cheese. Her own sauce of tomato, garlic, oil and balsamic vinegar was the finishing touch. Mmmmmm

Looks really good! No such food down here. Been eating mostly cafeteria style since I got here. . . lame.
